Spring Bay Distillery Sherry Cask No. 308 Tasmanian Single Malt Whisky
Far richer, darker and more restrained on the nose than either the Solera or the Bourbon Cask, Spring Bay’s Sherry Cask release still retains the signature Spring Bay lightness and quality of both spirit and cask, with no overpowering alcohol or oak to ruin the subtlety on display. This whisky teases rather than flaunts, with notes of orange caramel wafer, walnuts and ginger snap biscuit. And while many apera cask whiskies will beat you around the head with fudgy fortified, Spring Bay shows restraint with a light, dry palate that still has great texture and a long-enough finish to make you think before taking another sip. This isn’t one for the sweet tooth, but, if you like subtlety, complexity and balance in a whisky with no rough edges, this comes highly recommended.
