Sullivans Cove Apollo Inn Whisky
The team at The Apollo Inn, Melbourne, hand-selected this single cask of Sullivans Cove single malt. This cask yielded only 219 bottles – lucky are the rare few who get to taste it. Nosing this whisky, you can smell the texture before you taste it, with lashings of milk chocolate and coconut macarons. Sipping unveils vanilla, burnt butter, and rum baba with a hint of eucalyptus honey and fig jam and a brilliantly chewy texture that expands to hit every part of the palate. Finishing with tart tatin, peach Melba and a hint of green oak, this kind of whisky wins Sullivans Cove the big awards. At this price point, the value becomes entirely subjective, but if you can afford it, this whisky is bloody delicious and a style you simply won't get from other labels, either domestic or imported.
