Blackwattle Distilling Co Dry Sydney Gin
Starting with a strong aromatic profile that belies only 40% abv, this gin presents, at first, with sharp lemon pepper and a spicy juniper quality. A touch of sweet citrus opens up after the stronger notes blow off, giving the gin a pleasant baked quality. The palate is a lot more level, with less of the big spikes of flavour that are found in the nose, creating a consistent profile. The botanicals work well together to produce a green, herbaceous profile, reminiscent of provincial herbs with a slight woody quality. The smooth, harmonious nature of the gin makes discerning specific flavours a little challenging, and it struggles to allow each botanical to get a foothold. The finish offers more clarity and good length, with a warm mint element rounding it out.
